Instructions

  1. Cook Noodles: Boil wide lo mein noodles according to package instructions until al dente, then rinse under cold water to stop the cooking process. Set aside to keep them from sticking.
  2. Brown Pork: Heat peanut oil in a large skillet over medium-high heat. Add ground pork and 1/4 cup sliced green onions. Cook, breaking up the pork with a spatula, until browned and cooked through, about 5-7 minutes.
  3. Make Sauce: In a bowl, whisk together low-sodium chicken broth, mirin, dark soy sauce, minced garlic, grated ginger, sesame oil, and sriracha until well combined.
  4. Combine Ingredients: Add the cooked noodles, coleslaw mix, and the prepared sauce to the skillet with the browned pork. Toss everything together thoroughly so the noodles and veggies are evenly coated with the sauce.
