Ribs and Dry Rub

Instructions

  1. Prepare the ribs: Remove the thin white membrane from the back of the ribs by running a butter knife underneath it and using a paper towel to grip and pull it off. This ensures tenderness.
  2. Make the dry rub and season: Combine paprika, garlic powder, onion powder, chili powder, salt, and black pepper in a small bowl. Rub this mixture evenly over both sides of the ribs.
  3. Set up the Instant Pot: Pour 1 cup of water into the Instant Pot’s inner pot and place the metal trivet inside to keep the ribs elevated.
  4. Arrange the ribs: Stand the ribs upright on the trivet with the rib bones running vertically. You can lean them against the pot’s sides. If the rack is whole, curve it to fit; if cut in half, slabs can touch.
  5. Pressure cook the ribs: Close the Instant Pot lid and set the steam release valve to sealing. Select high pressure and cook baby back ribs for 25 minutes (or spare ribs for 35 minutes).
  6. Release pressure: Allow a natural pressure release for 15 minutes, then carefully quick release any remaining pressure by switching the valve to venting. For spare ribs, allow full natural release.
  7. Broil for glaze: Transfer ribs to a foil-lined baking sheet, brush with BBQ sauce, and broil in the oven for 3-6 minutes until the sauce caramelizes and browns. Watch carefully to prevent burning.
  8. Serve: Serve ribs hot with additional BBQ sauce on the side.
