Instructions

  1. Brown the Beef: Heat a 12-inch skillet over medium-high heat and add the ground beef. Cook until browned, stirring occasionally, then drain any excess fat to avoid a greasy dish.
  2. Sauté Onions and Garlic: Add the diced onion, minced garlic, salt, and black pepper to the skillet with the beef. Cook for about 2 minutes until the onions soften and become translucent, stirring occasionally.
  3. Add Tomatoes, Chiles, Stock, and Rice: Stir in the green chiles, undrained diced tomatoes, low sodium beef stock, long grain rice, and Worcestershire sauce. Mix well and bring the mixture to a simmer.
  4. Simmer Rice and Beef Mixture: Reduce the heat to low, cover the skillet, and let it cook for 20 minutes or until the rice is tender and has absorbed the liquids.
  5. Melt the Cheese: Turn off the heat, remove the cover, and sprinkle the shredded cheddar cheese evenly over the top. Replace the cover and let it sit for about 5 minutes so the cheese melts nicely.
