Chicken and Marinade

  • 1 tsp paprika
  • 1 tsp salt
  • 1 tbsp olive oil

Feta Spread and Toppings

  • 125g / 1/2 cup feta cheese
  • 2 tbsp plain Greek yogurt
  • 125 ml / 1/2 cup tzatziki sauce
  • 1/2 onion, sliced
  • 1 tomato, sliced
  • 4 leaves lettuce, washed and dried
  • 1 avocado, sliced
  • 4 hamburger buns, toasted

Instructions

  1. Marinate the Chicken: Cut the chicken breasts in half lengthwise. In a bowl, combine lemon juice and zest, pressed garlic, oregano, paprika, salt, and olive oil. Pour this marinade over the chicken breasts, ensuring they are fully coated. Cover and refrigerate for at least 3 hours or overnight for best flavor.
  2. Prepare the Toppings and Feta Spread: Preheat the grill. While it heats up, make the feta spread by breaking up feta cheese with a fork into a coarse paste. Mix it with the Greek yogurt until combined but still textured. Slice the onion, tomato, and avocado, and wash and dry the lettuce leaves. Prepare or have ready the tzatziki sauce.
  3. Grill the Chicken: Place the marinated chicken breasts on the preheated grill over high heat. Grill each side for 2 minutes to sear. Then move the chicken to indirect heat, cover the grill lid, and continue cooking for 5-7 minutes or until the internal temperature reaches 165°F (74°C). Remove from grill and allow to rest for 5 minutes.
  4. Assemble the Burgers: Spread 1-2 tablespoons of feta spread on the bottom half of each toasted bun. Layer a lettuce leaf, then a grilled chicken breast, followed by sliced onions, tomatoes, and avocado. Top with 1-2 tablespoons of tzatziki sauce and place the bun top on the burger. Serve immediately for best freshness and flavor.
