Instructions

  1. Crush Oreos: Place 16 Oreo cookies into a ziplock bag and crush them into small cookie crumbs that are easy to scoop. Set aside for layering.
  2. Make Chocolate Ganache: Combine chopped chocolate and ½ cup heavy cream in a microwave-safe bowl. Heat in 30-second intervals, stirring each time, until the mixture is smooth and glossy, resembling ganache. This usually takes 1 to 2 minutes total.
  3. Whip Cream: In a bowl with a whisk attachment, combine the remaining 2 cups heavy cream, powdered sugar, and vanilla extract. Mix on low for 1 minute, then increase to medium speed and whip until medium stiff peaks form, about 4 to 5 minutes. Reserve half of this whipped cream for layering.
  4. Make Chocolate Mousse: With the mixer on low, add the cooled chocolate ganache and cocoa powder to the remaining whipped cream in the mixing bowl. Mix gently until the mixture is glossy and fully combined to form the mousse layer.
  5. Assemble Parfaits: In 4 (6 oz) or 6 (4 oz) glasses, start with 1 tablespoon of crushed Oreo crumbs at the bottom. Add 1 to 2 tablespoons of chocolate mousse, followed by 1 to 2 tablespoons of whipped cream. Repeat layering 1 to 2 more times, finishing with a top layer of Oreo crumbs.
