  • 2 slices sharp cheddar or Swiss cheese

Instructions

  1. Cook the bacon: Heat a skillet over medium heat. Lay 4 strips of thick-cut bacon in the pan without overlapping. Cook for 6-8 minutes, flipping occasionally, until crispy and golden. Remove and drain on paper towels. Save a tablespoon of bacon fat for toasting bread if desired.
  2. Toast the bread: Toast 3 slices of bread until golden and crispy using a toaster, toaster oven, or pan-fry with a little butter or reserved bacon fat. This takes about 3-5 minutes.
  3. Prepare the spread: Mix 3 tablespoons mayonnaise with 1 teaspoon Dijon mustard in a small bowl. Set aside.
  4. Slice the tomatoes: Cut the tomato into medium-thick slices (about 1/4 inch). Sprinkle lightly with salt and pepper.
  5. Assemble the sandwich: Lay one slice of toasted bread on a work surface. Spread a generous layer of the mayo-mustard mixture. Layer 2 slices of turkey breast, crisp lettuce leaves, and a couple of tomato slices. Place the second slice of toasted bread on top.
