Cajun Seasoning Blend
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp oregano
- 1 tsp thyme
- 1 tsp paprika
- 1 tsp chili powder
Chicken
- 800 g chicken breast, halved
- 1.5 tbsp Cajun seasoning mix (from above)
- 2 tsp olive oil
- 25 g butter for cooking chicken
Garlic Rice
- 2 cups uncooked long grain rice
- 1 medium red onion, chopped
- 5 cloves garlic, chopped
- 0.5 tbsp Cajun seasoning mix (from above)
Creamy Cajun Sauce
- 15 g butter
- 0.5 tbsp Cajun seasoning mix (from above)
- 250 ml milk
- 150 g light cream cheese
- 40 g Parmesan cheese
Garnish
- Prepare Cajun Seasoning Blend: In a small bowl, combine salt, black pepper, garlic powder, onion powder, oregano, thyme, paprika, and chili powder to create your homemade Cajun seasoning mix.
- Marinate Chicken: Coat the halved chicken breasts with olive oil and 1½ tablespoons of the Cajun seasoning blend. Let the chicken marinate for at least 30 minutes, or preferably overnight in the refrigerator for maximum flavor infusion.
- Cook Chicken: Heat 25 g of butter in a large skillet over medium-high heat. Add the marinated chicken and cook until golden brown on the outside and fully cooked through, about 6-7 minutes per side depending on thickness. Remove from pan and allow to rest before slicing into strips.
- Sauté Aromatics and Rice: In the same skillet, add chopped red onion and garlic, sautéing until fragrant and translucent. Sprinkle in ½ tablespoon Cajun seasoning, then stir in the uncooked rice. Toss everything together until the rice is evenly coated and warmed through.
- Prepare Creamy Cajun Sauce: In a separate small saucepan, melt 15 g butter over low heat. Stir in ½ tablespoon Cajun seasoning, then gradually whisk in milk until combined. Add cream cheese and Parmesan cheese; continue stirring until the sauce is smooth, creamy, and well incorporated.
- Assemble Dish: Serve the garlic Cajun rice on plates, top with the sliced Cajun chicken, and spoon over the creamy Cajun sauce. Garnish with fresh parsley before serving to add a bright, fresh flavor and a pop of color.
Notes
- For best flavor, marinate the chicken overnight to allow spices to deeply penetrate the meat.
- Using day-old rice or pre-cooked and cooled rice can yield fluffier garlic rice with better texture.
- Keep the Cajun sauce over low heat and stir continuously to maintain a smooth, creamy consistency and prevent curdling.
- Adjust the amount of Cajun seasoning according to your spice preference.
