Ingredients

Scale

Meat and Seasonings

  • 2 lb lean ground beef (90/10 or 93/7 fat content)
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1/2 large yellow onion, finely diced

Condiments and Cheese

  • 1/4 cup mayonnaise
  • 8 slices medium cheddar cheese
  • 6 oz medium cheddar, shredded (or additional sliced cheese)

Buns and Toppings

  • 24 dinner rolls (or 2 packs of 12)
  • 2 Tbsp unsalted butter, melted, plus more for greasing baking sheet
  • 1 Tbsp sesame seeds
  • 1/2 Tbsp olive oil

Instructions

  1. Preheat and Prepare Baking Sheet: Preheat your oven to 350˚F. Butter the bottom of a rimmed baking sheet generously to prevent sticking and add flavor.
  2. Cook Onions and Beef: Heat a large skillet over medium-high heat and add 1/2 tablespoon olive oil. Add the finely diced onion and sauté briefly before adding the 2 pounds of ground beef. Season with salt, black pepper, and garlic powder. Break up the beef with a spatula and continue cooking until the beef is fully cooked through. Remove from heat.
  3. Drain Excess Fat and Mix Mayo: Tilt the skillet carefully to spoon off and discard excess fat. Stir in 1/4 cup mayonnaise into the cooked beef mixture to add moisture and richness.
  4. Assemble Sliders: Slice the dinner rolls in half horizontally. Place the bottom halves onto the buttered baking sheet. Layer each with a slice of cheddar cheese, then spread the ground beef mixture evenly over the cheese using the back of a spatula to square off the edges. Sprinkle the shredded cheddar on top of the beef.
  5. Add Tops and Season: Place the top halves of the buns, cut side down, over the layered beef and cheese. Brush the tops with 2 tablespoons of melted butter and immediately sprinkle sesame seeds evenly on top.
  6. Bake Sliders: Bake in the preheated oven for 12-15 minutes, or until the cheese is melted and the tops are golden brown and lightly crisp.

Notes

  • Using lean ground beef with 90/10 or 93/7 fat ratio keeps sliders juicy without too much grease.
  • The mayonnaise in the beef mixture adds moisture and richness, but can be omitted for a lighter version.
  • Butter the baking sheet and brush buns generously for a rich, toasty flavor and golden crust.
  • Feel free to add pickles, ketchup, or mustard after baking for classic cheeseburger toppings.
  • If you don’t have shredded cheese, you can use all sliced cheddar for convenience.
