  • ½ cup crumbled blue cheese
  • ¼ cup crème fraîche
  • ⅓ cup mayonnaise
  • 2 Tbsp buttermilk

Assembly

  • 3 cups Romaine lettuce, shredded
  • 18 slider buns, preferably brioche

Instructions

  1. Cook Chicken: Place the chicken breasts, chicken stock, water, and kosher salt in a large covered saucepan. Bring the mixture to a simmer over medium heat, then reduce to a bare simmer. Cook until the chicken is fully cooked through, about 20 minutes.
  2. Shred Chicken: Remove the cooked chicken breasts from the broth and transfer them to a plate. Once cool enough to handle, pull the chicken apart into shreds using two forks or your hands.
  3. Prepare Buffalo Sauce: In a medium saucepan, whisk together melted unsalted butter, light brown sugar, garlic salt, sweet paprika, white vinegar, Franks RedHot Sauce, sriracha sauce, and salt and pepper to taste. Bring the mixture to a boil, then reduce heat and let it simmer for 2 to 3 minutes. Remove from heat and set aside.
  4. Make Blue Cheese Spread: In a bowl, whisk together crumbled blue cheese, crème fraîche, mayonnaise, and buttermilk until smooth and creamy. Set aside.
  5. Combine Chicken and Buffalo Sauce: Add the shredded chicken to the prepared buffalo sauce in the saucepan. Cover and simmer over low heat for 20 minutes, allowing the flavors to meld together.
  6. Assemble Sliders: Split the brioche slider buns horizontally. Pile the buns generously with the buffalo chicken mixture, then add a layer of shredded romaine lettuce. Spread a dollop of the blue cheese spread on the top bun before placing it on the slider. Serve immediately.
