Buffalo Chicken Filling

  • 1 ½ cups Simple Shredded Slow Cooker Buffalo Chicken

Wrapping & Frying

  • 1 pack of 12 mozzarella string cheese sticks
  • 1 pack of 12 egg roll wrappers
  • 1 large egg white
  • Oil, for frying (about 1 inch deep, vegetable or canola oil recommended)

For Serving

  • Buffalo sauce, ranch, and/or blue cheese, to dip
  • Green onion, to garnish

Instructions

  1. Prepare the buffalo chicken: Begin with your slow-cooked shredded buffalo chicken, ensuring any excess buffalo sauce is drained to avoid soggy wrappers.
  2. Heat the oil: Pour about 1 inch of oil into a high-walled, heavy-bottomed pan and heat over medium-high until it reaches 350°F. You can test readiness by inserting a wooden spoon handle into the oil; bubbles should form around it.
  3. Prepare egg wash and wrappers: In a small bowl, whisk the egg white with a tablespoon of water. Lay out the egg roll wrappers on a flat surface and cover with a damp towel to prevent drying while assembling.
  4. Assemble the logs: Place one egg roll wrapper in a diamond orientation. Spoon 2 tablespoons of buffalo chicken down the center, allowing excess sauce to drip off. Lay one mozzarella string cheese stick on top of the chicken.
  5. Fold the wrapper: Fold the top corner down over the filling, then the bottom corner up. Brush the right side of the wrapper with the egg wash.
  6. Roll and seal: Fold the left side over the filling, tucking the corner slightly under like a burrito. Roll so the egg wash side sticks and seals the log. Ensure there are no tears; if needed, patch and seal with egg wash. Set aside.
  7. Repeat assembly: Continue assembling all 12 logs using the same method.
  8. Fry the logs: Once oil is at temperature, carefully place 3 logs seam-side down into the oil. Fry until golden and crisp, turning to brown evenly on all sides, about 2-3 minutes per side.
