These BBQ Chicken Sliders are easy-to-make, flavorful sandwiches perfect for game day, parties, or a quick and delicious meal. Shredded chicken mixed with tangy barbecue sauce is layered on slider rolls with crispy bacon, red onions, and melted cheddar cheese, then baked to perfection for a warm, cheesy delight.

Ingredients

Scale

Chicken Mixture

  • 2 pounds cooked, shredded chicken (boneless skinless breasts or thighs, or shredded rotisserie chicken)
  • 1 ¼ cups barbecue sauce

Slider Assembly

  • 12 slider rolls, sliced in half horizontally
  • 6 slices thick cut bacon, cooked
  • ½ cup sliced red onion
  • 1 cup shredded cheddar cheese (or any shredded cheese of choice)
  • 4 tablespoons butter, melted

Instructions

  1. Preheat the Oven: Preheat your oven to 350℉ and spray a 9×13-inch baking dish with non-stick cooking spray to prevent sticking.
  2. Mix Chicken and BBQ Sauce: In a medium bowl, combine the cooked shredded chicken with the barbecue sauce, ensuring the chicken is evenly coated. Set aside.
  3. Prepare Slider Rolls: Slice each slider roll horizontally and arrange the bottom halves evenly in the prepared baking dish.
  4. Assemble the Sliders: Spread the BBQ-coated shredded chicken evenly over the bottom halves of the rolls. Top the chicken with cooked bacon slices and sliced red onions, then sprinkle the shredded cheddar cheese evenly over the top.
  5. Top and Butter: Place the top halves of the slider rolls over the cheese layer. Brush the melted butter generously over the tops of the rolls for a golden finish.
  6. Bake Covered: Cover the baking dish tightly with aluminum foil and bake in the preheated oven for 15 minutes, allowing the flavors to meld and the cheese to melt.
  7. Bake Uncovered: Remove the foil and bake uncovered for an additional 5 minutes to brown the tops of the sliders.
  8. Cool and Serve: Let the sliders cool for 5 minutes before serving for optimal texture and flavor enjoyment.

Notes

  • Boneless skinless chicken breasts or thighs both shred well. If you don’t have shredded chicken, shredded rotisserie chicken is a convenient alternative.
  • Any type of shredded cheese can be used, such as mozzarella, pepper jack, or Monterey Jack, depending on your taste preference.
  • For storing leftovers, keep sliders in an airtight container in the refrigerator for up to 3 days.
  • To reheat, wrap the sliders in aluminum foil and warm them in a 350℉ oven for 5 to 10 minutes until hot and cheese is melty.
