Instructions

  1. Prepare Vegetables: Finely dice the red bell pepper and red onion, then mince the garlic cloves. Using a food processor for uniform texture is recommended.
  2. Mix Ingredients: In a large bowl, combine the extra lean beef mince with the diced vegetables, minced garlic, smoked paprika, ground cumin, ground coriander, salt, and black pepper. Mix thoroughly until all ingredients are fully integrated.
  3. Prepare Tortillas: Remove the rounded edges from each tortilla wrap to create large square pieces.
  4. Layer Mixture: Place one tortilla square on a clean surface and spread a thin, even layer of the mince mixture on top. Add another tortilla on top and spread more mince, repeating until all the mince and tortillas are used, finishing with a tortilla on top. Press down firmly to compact the layers.
  5. Slice into Strips: Use a sharp knife to slice the stacked tortillas lengthwise into 6 long strips.
  6. Skewer the Strips: Flip each strip onto its side to expose the layers and insert a skewer lengthwise through each strip.
  7. Cut Individual Kebabs: Cut across each skewered strip to produce 8 individual kebab skewers.
  8. Preheat Air Fryer & Cook: Preheat the air fryer to 190°C (375°F). Arrange the skewers in a single layer inside the air fryer basket and cook for 8 minutes, turning halfway through to ensure even cooking. Cook until the beef is fully cooked and the tortillas are golden and crispy.
