Scale

Quesadilla Ingredients

  • 2 mini flour tortillas
  • 2 Tbsp vegetarian refried beans
  • 1/2 red pepper, diced
  • 2 spring onions, sliced
  • Small handful grated cheddar cheese

Instructions

  1. Prepare the Quesadillas: Spread the vegetarian refried beans evenly over one half of each mini flour tortilla. Then sprinkle the diced red pepper and sliced spring onions on top, followed by a generous amount of grated cheddar cheese. Fold each tortilla in half and press firmly to secure the filling.
  2. Air Fry the Quesadillas: Place the folded tortillas inside the air fryer basket. To ensure they stay flat and achieve a crispy texture, weigh down each quesadilla with an oven-proof item such as a small ramekin or a metal fork. Cook in the air fryer at 200°C (390°F) for 5 minutes or until the quesadillas are golden and crispy.
  3. Serve Immediately: Once cooked, remove the quesadillas carefully from the air fryer and serve hot for the best taste and texture.

Notes

  • If you don’t have an air fryer, you can prepare the quesadillas on the stovetop. Assemble as usual, then place them in a dry frying pan over medium heat. Cook each side for a few minutes until crispy and golden brown.
  • Feel free to customize the filling by adding your favorite vegetables or protein alternatives.
  • To make it vegan, substitute the cheddar cheese with a plant-based cheese option.
