Cake:

  • 200g all-purpose flour
  • 200g sugar
  • 3 large eggs
  • 120g unsalted butter, softened
  • 2 large oranges (zest and juice)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 100ml whole milk
  • 1 tablespoon orange blossom water (optional)

Glaze:

  • 150g powdered sugar

Instructions

  1. Preheat Oven: Preheat the oven to 180°C (350°F) and grease a cake tin.
  2. Mix Dry Ingredients: In a bowl, combine flour, baking powder, baking soda, and salt.
  3. Beat Wet Ingredients: In another bowl, cream butter and sugar. Add eggs, orange zest, orange juice, and vanilla extract.
  4. Combine Mixtures: Gradually add dry ingredients to wet ingredients, alternating with milk. Pour batter into the cake tin.
  5. Bake: Bake for 30-35 minutes or until a toothpick inserted comes out clean.
  6. Make Glaze: Mix powdered sugar with some orange juice to make a glaze. Drizzle over the cooled cake.

Notes

  • You can add a sprinkle of chopped pistachios on top for extra crunch.
  • For a more intense orange flavor, brush the warm cake with orange syrup before glazing.
