Ingredients

Scale

Red Curry Broth:

  • 1 can (13.5 fl oz / 400ml) coconut milk
  • 23 tablespoons red curry paste (adjust for spice preference)
  • 2 tablespoons soy sauce (low sodium preferred)
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or sugar
  • 1 teaspoon sesame oil
  • 1 large garlic clove, grated
  • 1 small cube of ginger, grated

Dumpling Bake:

  • 1620 dumplings of choice (frozen veggie dumplings recommended)
  • 2 bok choy bulbs, chopped
  • 1 zucchini, sliced (or any preferred vegetable)
  • Garnish options: sesame seeds, sliced green onions, cilantro/coriander, chili crisp oil
  • White jasmine rice or noodles for serving

Instructions

  1. Prepare the curry broth: In a large 12 x 8 inch (30 x 20 cm) baking dish, combine the coconut milk, red curry paste, soy sauce, rice vinegar, honey, and sesame oil. Whisk thoroughly to dissolve any lumps of curry paste. Grate in the garlic and ginger for fresh aromatics. If serving with rice or noodles and you prefer a brothier consistency, add ¼ cup of water to the mixture.
  2. Add the vegetables: Preheat your oven to 400℉ (200℃). Chop the bok choy bulbs and slice the zucchini, then add them to the baking dish. Stir gently to coat the vegetables evenly with the curry broth.
  3. Arrange the dumplings: Place the frozen dumplings in the dish, ensuring they are not overlapping and slightly pressing them into the broth so they absorb some flavor. The tops of the dumplings should remain above the broth surface. Spoon a bit of the broth over them for extra flavor. Cover the baking dish tightly with aluminum foil.
  4. Bake the dish: Bake covered for 20 minutes, allowing the dumplings to cook through and the flavors to meld. Then remove the foil and continue baking for an additional 5-10 minutes until the broth bubbles nicely and the dumpling tops develop a light crisp.
  5. Garnish and serve: Once baked, add your choice of garnishes such as sesame seeds, sliced green onions, cilantro, or chili crisp oil. Serve the dumpling bake hot over a bed of fragrant white jasmine rice or noodles and enjoy this comforting dish.

Notes

  • You can adjust the spiciness by varying the amount of red curry paste used.
  • If you prefer a soupier dish, add extra water or broth before baking.
  • Frozen dumplings can be substituted with fresh dumplings if preferred; adjust baking time accordingly.
  • Feel free to swap zucchini for other vegetables like bell peppers or mushrooms.
  • This recipe works well as a vegan meal; ensure your dumplings meet dietary preferences.
