For the Peanut Butter Mousse
- 350 grams silken tofu
- 3–4 tbsp smooth peanut butter, to taste
- 3–4 tbsp agave syrup (or maple syrup/powdered sugar), to taste
- 1 tsp vanilla paste or extract
- 1 pinch salt
For the Chocolate Ganache
- 100 grams 70% dark chocolate chips (or chopped chocolate)
- 400 grams tin full fat coconut milk, only the creamy part at the top (chilled in fridge for 1 hour before scooping)
- Prepare the Peanut Butter Mousse: In a blender or food processor, combine silken tofu, smooth peanut butter, agave syrup, vanilla extract, and a pinch of salt. Blend until completely smooth and creamy. Adjust sweetness and peanut butter quantity to your taste by blending again if necessary.
- Chill the Peanut Butter Mousse: Transfer the mousse to serving glasses or bowls and refrigerate for at least 30 minutes to allow it to set slightly and enhance the flavors.
- Make the Chocolate Ganache: Open the chilled coconut milk can and carefully scoop out the thick, creamy top layer, leaving the watery liquid behind. In a small saucepan, gently warm the coconut cream over low heat until hot but not boiling. Remove from heat and add dark chocolate chips. Let sit for a minute to soften, then stir until smooth and glossy.
- Assemble and Serve: Spoon or drizzle the warm chocolate ganache over the chilled peanut butter mousse just before serving. Optionally, garnish with chopped peanuts or a sprinkle of cocoa powder for extra texture and flavor.
