  • 1 medium red bell pepper (sliced)
  • 3 cloves garlic (minced)
  • 1 tbsp fresh ginger (grated)
  • 1/4 cup low-sodium soy sauce (or tamari for gluten-free)
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tsp cornstarch (or arrowroot powder)
  • 1/2 cup water
  • 1 tbsp hoisin sauce (optional, +1 point)
  • 1 tsp sriracha (optional, for heat)
  • Cooking spray

Instructions

  1. Marinate the steak: In a bowl, mix the soy sauce, rice vinegar, sesame oil, and cornstarch. Add the sliced steak and marinate for 30 minutes.
  2. Stir-fry: Heat a large pan over high heat with cooking spray. Add garlic and ginger, then add the marinated steak and stir-fry until browned.
  3. Add vegetables: Add bok choy stems, bell pepper, and bok choy leaves. Stir-fry until vegetables are tender-crisp.
  4. Finish: Add water, hoisin sauce, and sriracha. Cook until the sauce thickens. Serve hot.
