Ingredients

Scale

Braised Short Ribs

  • 4 lbs beef short ribs
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 4 cups beef broth
  • 1 cup red wine or grape juice (for a non-alcoholic version)
  • 2 sprigs fresh thyme
  • 2 sprigs fresh rosemary

Garlic Mashed Potatoes

  • 2 lbs potatoes (Yukon Gold or Russet)
  • 4 cloves garlic
  • 1/2 cup milk
  • 1/4 cup butter
  • Salt to taste

Instructions

  1. Preheat and Season: Preheat your oven to 325°F (165°C). Season the short ribs generously with salt and pepper to enhance flavor.
  2. Sear the Short Ribs: Heat olive oil in a Dutch oven over medium-high heat. Sear the short ribs on all sides until nicely browned, about 3-4 minutes per side. Remove from pot and set aside.
  3. Sauté Vegetables and Add Tomato Paste: In the same pot, sauté chopped onion, carrots, and minced garlic until softened, approximately 5-7 minutes. Add tomato paste and cook for an additional 2 minutes, stirring constantly to deepen the flavors.
  4. Add Liquids and Herbs: Pour in beef broth and red wine (or grape juice for a non-alcoholic option). Stir to combine. Add fresh thyme and rosemary sprigs. Return seared ribs to the pot, ensuring they are submerged in the liquid.
  5. Braise the Short Ribs: Cover the pot and braise in the preheated oven for 2.5 to 3 hours until the ribs are tender and falling off the bone.
  6. Prepare Garlic Mashed Potatoes: Peel and chop potatoes, then boil them with whole garlic cloves until tender, about 20-25 minutes. Drain well.
  7. Mash Potatoes and Garlic: Mash the cooked potatoes and garlic together, gradually mixing in milk and butter until smooth and creamy. Season with salt to taste.
  8. Serve: Transfer the short ribs to a serving platter and spoon the braising liquid over them. Serve the ribs hot over the creamy garlic mashed potatoes for a satisfying meal.

Notes

  • For extra richness, add roasted garlic or fresh herbs such as parsley or chives to the mashed potatoes.
  • Leftovers can be stored in the refrigerator and often taste better the next day as flavors meld.
