Ingredients

Scale

Sausage Mixture

  • 1 pound ground breakfast sausage
  • 1 medium onion, diced
  • 1 red bell pepper, diced

Egg Mixture

  • 8 eggs
  • 2 cups milk
  • 1 tsp garlic powder
  • ½ tsp pepper

Other Ingredients

  • 1½ cups Colby jack cheese, divided
  • 28 oz frozen tater tots

Instructions

  1. Cook the Sausage and Vegetables: In a large skillet over medium heat, brown the ground breakfast sausage until fully cooked, breaking it apart as it cooks. Drain excess grease if necessary. Add the diced onion and red bell pepper to the skillet and sauté until the vegetables are softened, about 5 minutes. Remove from heat and set aside.
  2. Prepare the Egg Mixture: In a large mixing bowl, whisk together the eggs, milk, garlic powder, and pepper until well combined and slightly frothy.
  3. Assemble the Casserole: Preheat your oven to 350°F (175°C). In a greased 9×13 inch baking dish, evenly spread half of the tater tots in a single layer. Layer the cooked sausage and vegetable mixture over the tater tots, then sprinkle ¾ cup of Colby jack cheese evenly on top. Pour the egg mixture evenly over the layers. Spread the remaining tater tots over the top and sprinkle with the remaining ¾ cup of cheese.
  4. Bake the Casserole: Place the baking dish in the preheated oven and bake for 45-50 minutes, or until the eggs are fully set and the tater tots are golden and crispy. To check doneness, insert a knife or toothpick in the center — it should come out clean.
  5. Rest and Serve: Remove the casserole from the oven and let it rest for 5-10 minutes before cutting into squares. This allows the casserole to set and makes serving easier.

Notes

  • You can substitute Colby jack cheese with cheddar or Monterey jack for a different flavor.
  • For a spicier version, add some diced jalapeños or a pinch of red pepper flakes to the sausage mixture.
  • The casserole can be assembled the night before; cover and refrigerate, then bake in the morning, adding a few extra minutes to the baking time if going straight from cold.
  • To keep the casserole gluten-free, ensure that the breakfast sausage and tater tots are labeled gluten-free.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the oven or microwave.
