Instructions

  1. Prepare the Chicken: Pat chicken breasts dry and slice into bite-sized pieces. Season with salt and pepper. Toss the chicken pieces in cornstarch until thoroughly coated to ensure a crispy texture when cooked.
  2. Heat the Pan: Heat vegetable oil in a large skillet or wok over medium-high heat until shimmering.
  3. Cook the Chicken: Add the coated chicken pieces to the hot skillet in a single layer. Cook without moving for 3-4 minutes until the underside is golden and crispy, then flip and cook the other side until fully cooked and crispy, about another 3-4 minutes. Remove the chicken from the skillet and set aside.
