A refreshing and vibrant Strawberry Sparkler Mocktail made with homemade berry ice cubes, a sweet strawberry syrup puree, and sparkling water accented with a hint of lemon juice. Perfect for a festive, sugar-conscious beverage that’s both fruity and bubbly.

Ingredients

Berry Ice Cubes

  • Fresh Blueberries – 1/2 cup
  • Fresh Strawberries (chopped) – 1/2 cup
  • Water – as needed to fill ice cube trays

Strawberry Syrup Puree

  • Strawberries (fresh or frozen) – 1 1/2 cups
  • Water – 1 cup
  • Maple Syrup – 1/4 cup (optional, can substitute honey or coconut sugar, or omit for sugar-free)

Strawberry Sparkler Drink

  • Sparkling Water – 2 cups
  • Lemon Juice – 1 tablespoon (freshly squeezed)
  • Strawberry Syrup Puree – 1/2 cup (adjust to taste)

Instructions

  1. Prepare Berry Ice Cubes: Place fresh blueberries and chopped strawberries into ice cube trays. Fill each tray with water, ensuring fruit is evenly distributed in each cube. Freeze until solid, about 4-6 hours or overnight for best results.
  2. Make Strawberry Syrup Puree: In a blender or food processor, combine 1 1/2 cups strawberries, 1 cup water, and maple syrup (if using). Blend until smooth. Pour the mixture into a small saucepan and simmer over medium-low heat for about 10 minutes, stirring occasionally, until slightly thickened. Remove from heat and allow to cool completely.
  3. Mix the Strawberry Sparkler: In a glass, add 1/2 cup of the cooled strawberry syrup puree. Pour in 2 cups of sparkling water and 1 tablespoon of freshly squeezed lemon juice. Stir gently to combine.
  4. Serve: Add the prepared berry ice cubes to the glass, giving the drink a beautiful fruity chill. Garnish with a fresh strawberry or lemon slice if desired. Serve immediately for a crisp and refreshing mocktail experience.

Notes

  • The maple syrup is optional; you can omit it to reduce sugar content or replace it with honey or coconut sugar based on preference.
  • For a more intense berry flavor, use frozen strawberries in the syrup puree.
  • The berry ice cubes not only chill the drink but also add bursts of fresh fruit as they melt.
  • Adjust the amount of lemon juice and syrup puree to your taste preference for sweetness and tartness.
  • This mocktail is perfect for summer gatherings, baby showers, or any festive occasion where a non-alcoholic option is desired.
