Brownie Batter
- ¾ cup butter (salted or unsalted works)
- 1 cup + 2 tbsp unsweetened cocoa powder
- 1 ¾ cup + 2 tbsp granulated sugar
- ½ tsp kosher salt
- 3 large eggs
- 1 ½ tsp pure vanilla extract
- ¾ cup all-purpose flour
- 1 ¼ cups coarsely chopped chocolate (divided use)
Strawberry Layer
- ¼ cup strawberry jam
- 4 medium strawberries, sliced
- ½ cup coarsely chopped chocolate (reserved from total 1 ¾ cups)
- Preheat the oven: Set your oven to 350°F (175°C) and grease or line a 9×9-inch baking pan with parchment paper for easy removal of the brownies.
- Melt butter and mix cocoa: In a medium saucepan, melt the butter over low heat. Remove from heat and whisk in the cocoa powder until smooth and combined.
- Combine sugar and salt: Stir granulated sugar and kosher salt into the cocoa-butter mixture until well incorporated.
- Add eggs and vanilla: Beat the eggs one at a time into the mixture, ensuring each is fully incorporated before adding the next. Stir in vanilla extract.
- Incorporate flour and chocolate: Gently fold in the all-purpose flour until just combined, then fold in 1 ¼ cups of the coarsely chopped chocolate, saving the rest for topping.
- Pour batter and add strawberry jam: Transfer half of the brownie batter to the prepared pan, spreading it evenly. Drop spoonfuls of strawberry jam on top and swirl lightly with a knife. Pour the remaining batter over the jam layer and smooth the top.
- Top with chocolate and strawberries: Evenly sprinkle the remaining ½ cup chopped chocolate and sliced strawberries over the batter’s surface.
- Bake the brownies: Place the pan in the preheated oven and bake for 30-35 minutes, or until a toothpick inserted near the center comes out with moist crumbs but not wet batter.
- Cool and serve: Remove the pan from the oven and let the brownies cool completely in the pan on a wire rack before cutting into squares and serving.
Notes
- For best results, do not overmix the batter to keep brownies fudgy and tender.
- You can substitute fresh raspberries or blueberries for strawberries if preferred.
- Use high-quality dark chocolate for a richer flavor.
- Allow brownies to cool completely to enhance flavor development and ease of slicing.
- Store leftovers in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
