For the Crust
- 2 cups graham cracker crumbs (about 2 sleeves)
- 2 tablespoons granulated sugar
- 1⁄4 cup unsalted butter, melted
For the Filling
- 4 (8-ounce) packages cream cheese, softened
- 1 1⁄4 cups granulated sugar
- 2 tablespoons cornstarch
- 4 large eggs + 1 yolk
- 1⁄2 cup sour cream
- 1⁄4 cup heavy cream
- 1 tablespoon vanilla extract
- 6 cups water (for the water bath)
For the Strawberry Topping
- 1⁄2 cup granulated sugar
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
- 2 pounds fresh strawberries, hulled and finely chopped, divided
- Prepare the Crust: Mix graham cracker crumbs, sugar, and melted butter. Press into a springform pan.
- Make the Filling: Beat cream cheese, sugar, and cornstarch. Add eggs, sour cream, heavy cream, and vanilla. Pour over crust.
- Bake: Place pan in a water bath and bake until set.
- Prepare the Topping: Cook sugar, cornstarch, and lemon juice. Add half of the strawberries. Cook until thickened. Cool and top cheesecake with the mixture and remaining strawberries.
