Brownies:
- 2 large eggs
- ½ cup (113g) unsalted butter, melted (1 stick)
- 1 tsp vanilla extract
- 15.25 oz box strawberry cake mix
- ½ tsp salt
Glaze:
- ¾ cup (84g) powdered sugar
- 2 Tbsp strawberry preserves or jelly
- 1 Tbsp milk
- Preheat and prepare pan: Preheat your oven to 350ºF and line an 8×8 or 9×9 inch glass baking pan with parchment paper to prevent sticking and for easy removal of the brownies.
- Mix wet ingredients: In a mixing bowl, whisk together the 2 large eggs, melted butter (½ cup or 113g), and 1 tsp of vanilla extract using a fork until well combined and smooth.
- Add dry ingredients: Stir in the 15.25 oz strawberry cake mix and ½ tsp salt using a spatula until fully incorporated. The batter will be thick and dense.
- Transfer batter to pan: Spread the thick batter evenly into the prepared baking pan, using a spatula to gently press and smooth the surface.
- Bake the brownies: Place the pan in the preheated oven and bake for 20-25 minutes, or until the edges are set and the center appears puffy and cooked through.
- Cool the brownies: Remove the brownies from the oven and allow them to cool completely in the pan on a wire rack before glazing.
- Prepare the glaze: In a small bowl, whisk together ¾ cup powdered sugar, 2 tablespoons strawberry preserves or jelly, and 1 tablespoon milk until smooth and combined into a spreadable glaze.
- Apply glaze: Once the brownies have cooled fully, evenly spread the strawberry glaze over the top using a spatula or knife.
- Set the glaze: For cleaner slicing and less mess, let the glaze set at room temperature for a few hours before cutting the brownies into 9 squares and serving.
Notes
- Ensure the brownies are completely cool before glazing to prevent the glaze from melting.
- Use parchment paper with an overhang for easy removal of brownies from the pan.
- For a stronger strawberry flavor, add a teaspoon of strawberry extract along with the vanilla if desired.
- Store brownies in an airtight container at room temperature for up to 3 days or refrigerate for longer freshness.
- Use a serrated knife to cut clean squares once the glaze has set.
