  • 1 ounce strawberry simple syrup
  • 24 ounces club soda, to taste

Instructions

  1. Make the Strawberry Simple Syrup: Combine the strawberries, water, and granulated sugar in a small saucepan over medium heat. Stir occasionally until the sugar dissolves completely and the mixture starts to boil, then reduce heat and simmer for about 10 minutes until the strawberries soften and the syrup thickens slightly. Remove from heat and strain through a fine mesh sieve to remove solids. Let cool.
  2. Muddle Strawberries and Basil: In a sturdy glass or cocktail shaker, place the sliced strawberries and basil leaves. Use a muddler or the back of a spoon to gently crush them to release their flavors and aromas without pulverizing entirely.
  3. Mix the Mojito: Add the white rum and 1 ounce of the prepared strawberry simple syrup to the muddled mixture. Fill the glass with ice.
  4. Add Club Soda and Stir: Top the glass with 2 to 4 ounces of club soda based on your preferred level of fizziness and sweetness. Stir gently to combine all the ingredients evenly.
