Puff Pastry
- 1 sheet of puff pastry, thawed
Filling
- 1 cup fresh spinach, chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
Other
- 1 egg, beaten (for egg wash)
- Preheat Oven: Preheat your oven to 400°F (200°C) to ensure it’s hot enough to bake the pastry to a golden brown.
- Prepare Puff Pastry: Roll out the thawed puff pastry sheet on a lightly floured surface to smooth it out and slightly enlarge its size.
- Mix Filling: In a bowl, combine the chopped spinach, crumbled feta, grated Parmesan cheese, and season with salt and pepper. Mix until well blended.
- Assemble Bites: Cut the puff pastry into small squares, about 2-3 inches each. Place a spoonful of the spinach and cheese filling onto the center of each square.
- Fold and Seal: Fold each pastry square over the filling to form triangles or bring corners together to form little parcels. Press edges firmly to seal the filling inside.
- Apply Egg Wash: Brush the beaten egg over the surface of the puff pastry bites. This will give them a beautiful golden and glossy finish when baked.
- Bake: Arrange the bites on a baking sheet lined with parchment paper. Bake in the preheated oven for 15-18 minutes, or until the pastry is puffed and golden brown.
- Cool and Serve: Remove from oven and let the bites cool slightly on a wire rack. Serve warm as an appetizer or snack.
Notes
- For a richer filling, you can add a tablespoon of cream cheese or ricotta.
- Make sure the spinach is well drained to prevent the pastry from becoming soggy.
- These bites can be prepared ahead and frozen before baking; bake straight from frozen adding a few extra minutes to the cooking time.
- Use good quality puff pastry for best flakiness and rise.
