Ingredients

Scale

Tuna Mousse

  • 1 can flaked or chunk tuna packed in water, drained (about 5 oz)
  • 2 Tbsp red onion, finely diced
  • 2 tsp drained capers
  • 1 Tbsp fresh dill, finely chopped
  • 1 Tbsp Dijon mustard
  • 34 Tbsp plain Greek yogurt
  • 1 Tbsp lemon juice
  • Salt and pepper, to taste

To Assemble

  • 2 slices whole wheat bread, toasted
  • 1/4 avocado, mashed
  • 12 Tbsp pesto (approximately 1 Tbsp used for nutrition)
  • 12 slices tomato
  • Salt and pepper, to taste

Instructions

  1. Prepare the Tuna Mousse: In a medium bowl, combine the drained tuna, finely diced red onion, drained capers, and chopped fresh dill. Add Dijon mustard, lemon juice, and plain Greek yogurt. Mix all ingredients thoroughly until well combined and creamy. Season with salt and pepper to your preference.
  2. Toast the Bread: Toast two slices of whole wheat bread until golden and crisp to add texture and warmth to the sandwich.
  3. Assemble the Sandwich: Spread the mashed avocado evenly onto one slice of the toasted bread. Next, spread approximately 1 tablespoon of pesto over the avocado layer. Spoon the prepared tuna mousse onto the pesto, ensuring an even layer.
  4. Add Tomato and Final Seasoning: Place 1–2 slices of fresh tomato over the tuna mousse. Sprinkle a pinch of salt and pepper to enhance the flavors.
  5. Finish and Serve: Top with the second slice of toasted bread. Cut the sandwich in half if desired, and serve immediately for a fresh and satisfying meal.

Notes

  • You can adjust the amount of Greek yogurt to achieve your preferred consistency for the tuna mousse.
  • Using fresh dill adds a bright herbal note, but you can substitute with fresh parsley if preferred.
  • To make it spicier, add a dash of cayenne pepper or hot sauce to the tuna mousse mixture.
  • This sandwich can be made ahead and stored covered in the refrigerator for up to 24 hours.
  • For a gluten-free option, substitute the whole wheat bread with gluten-free bread.
