Spanish Beans & Eggs is a flavorful and hearty dish made with white beans, eggs, tomatoes, and a touch of Spanish paprika. Perfect for a satisfying breakfast or brunch.

Main Ingredients:

  • 2 tbsp extra virgin olive oil
  • 20 oz canned white beans
  • 4 cage-free organic eggs
  • 4 cloves garlic
  • 1/2 onion
  • 15 oz can diced tomatoes
  • 1 tsp sweet smoked Spanish paprika
  • 1 tbsp freshly chopped parsley
  • 2 tbsp freshly chopped chives
  • sea salt
  • black pepper

Instructions

  1. Prepare Ingredients: Chop garlic, onion, parsley, and chives. Drain and rinse white beans.
  2. Cook Beans & Tomatoes: Heat olive oil in a pan, sauté garlic and onion until fragrant. Add beans, tomatoes, paprika, salt, and pepper. Simmer for 10 minutes.
  3. Add Eggs: Create wells in the bean mixture and crack eggs into them. Cover and cook until eggs are set.
  4. Serve: Sprinkle with parsley and chives before serving.

Notes

  • You can customize this dish by adding bell peppers, jalapeños, or chorizo for extra flavor.
  • Adjust the spice level by adding more or less paprika.
