Ingredients

Scale

Dough

  • 300 g flour
  • 5 g salt
  • 1 g Italian seasoning
  • 5 g instant yeast
  • 20 ml sunflower oil
  • 10 g honey
  • 150 ml water

Extra

  • Herb cream cheese (quantity as needed for spreading)
  • Grated cheese (quantity as desired for topping)
  • Italian seasoning (for sprinkling)

Chicken Mixture

  • 25 g butter
  • 20 ml olive oil
  • 400 g chicken thighs, diced
  • 150 g yellow onion, finely chopped
  • 2 g cayenne powder
  • 2 g garlic powder
  • 2 g onion powder
  • 1.5 g black pepper powder
  • 7 g chicken stock cube, crumbled
  • 75 ml heavy cream
  • 250 g cheese mix (blend of cheeses such as mozzarella and parmesan)
  • 1 g Italian seasoning

Instructions

  1. Prepare the Dough: In a large mixing bowl, combine flour, salt, Italian seasoning, and instant yeast. Add honey, sunflower oil, and water gradually. Knead the mixture until a smooth and elastic dough forms. Cover and let it rise in a warm place for about 1 hour or until it doubles in size.
  2. Cook the Chicken Mixture: Heat butter and olive oil in a skillet over medium heat. Add the diced chicken thighs and cook until golden and cooked through. Add the chopped yellow onion and sauté until translucent. Stir in cayenne powder, garlic powder, onion powder, black pepper, crumbled chicken stock cube, and Italian seasoning. Pour in the heavy cream and reduce the heat. Mix in the cheese blend and cook until melted and creamy. Remove from heat and let it cool slightly.
  3. Assemble the Bread: Once the dough has risen, punch it down and divide it into equal portions. Roll each portion into a flat oval shape. Spread a generous layer of herb cream cheese on each piece, then spoon the cooled chicken mixture evenly over the cream cheese. Carefully fold and seal the edges to encase the filling completely. Place the stuffed dough shapes on a baking tray lined with parchment paper.
  4. Final Topping and Baking: Brush the tops with oil or butter for a golden finish. Sprinkle grated cheese and a little Italian seasoning on top. Bake in a preheated oven at 180°C (350°F) for 20-25 minutes or until the bread is golden brown and cooked through.
  5. Serve: Remove from the oven and let cool slightly before serving warm to enjoy the creamy, cheesy chicken filling inside soft, fluffy bread.

Notes

  • For best results, use fresh chicken thighs for a tender and juicy filling.
  • You can substitute the cheese mix with your favorite combination of mozzarella, parmesan, or cheddar.
  • The dough can be prepared in advance and refrigerated overnight for enhanced flavor.
  • Adjust cayenne powder to control the spice level according to your preference.
  • This bread is best enjoyed fresh but can be reheated in the oven to restore softness.
