Made with dairy-free sweetened condensed milk and shredded coconut, these no-bake truffles are rolled in extra coconut and decorated with vegan white chocolate, colorful icings, pretzel sticks, and red candy straps to resemble charming snowmen. Truffle Base

  • 320g (11.25 oz) dairy-free sweetened condensed milk, 1 regular can
  • 4 cups (320g) fine shredded coconut / desiccated coconut, plus extra for rolling

Decoration

  • 3 tablespoons vegan white chocolate or white candy melts, melted
  • 3 tablespoons black-colored icing
  • 2 tablespoons orange-colored icing
  • 24 thin pretzel sticks, 2 inches (5 cm) each
  • 12 red candy straps, 5 inches (13 cm) each

Instructions

  1. Prepare Truffle Mixture: In a mixing bowl, combine the dairy-free sweetened condensed milk with the shredded coconut. Stir well until the mixture is fully combined and holds together when pressed.
  2. Form Truffle Bodies: Using clean hands, shape the mixture into small snowman bodies by forming three spheres of decreasing size: large for the base, medium for the middle, and small for the head. Assemble the three spheres carefully, pressing them together gently.
  3. Coat with Coconut: Roll each assembled snowman truffle in extra shredded coconut to give them a snowy, textured exterior. Set them aside on a tray lined with parchment paper.
  4. Melt White Chocolate: Melt the vegan white chocolate or white candy melts in a microwave or double boiler until smooth and pourable.
  5. Decorate Snowmen: Using a small brush or spoon, apply the melted white chocolate onto the snowman bodies for a smooth finish if needed. Use black-colored icing to pipe eyes, buttons, and facial features. Use orange-colored icing to pipe a small carrot nose on each snowman’s face.
  6. Attach Pretzel Arms: Insert two thin pretzel sticks into the sides of each snowman to represent arms.
