Ingredients

Scale

Meat and Aromatics

  • ½ pound lean ground beef
  • ½ pound sweet Italian sausage, small chopped
  • 1 tablespoon minced garlic

Base and Sauce

  • 9 full size lasagna noodles, broken into small pieces about 1 to inches
  • 23.75 ounce jarred pasta sauce
  • 1½ cups water
  • ½ teaspoon Italian seasoning
  • ⅛ teaspoon crushed red pepper flakes (optional)

Cheese Mixture

  • 8 ounce cup ricotta cheese
  • ⅓ cup freshly shredded Parmesan cheese
  • ½ teaspoon kosher salt
  • ½ teaspoon fresh cracked black pepper

Topping and Garnish

  • 1¼ cups freshly shredded mozzarella cheese
  • 2 tablespoons minced fresh basil

Instructions

  1. Cook the Meat: In a 10 to 12 inch skillet over medium-high heat, add the ground beef and sweet Italian sausage. Use a wooden spoon to break the meat apart and stir often as it cooks until no longer pink.
  2. Drain Excess Grease: Once cooked through, drain any excess grease from the skillet and return the meat to the pan.
  3. Add Garlic: Reduce the heat to medium and add the minced garlic. Cook for about one minute or until fragrant, stirring frequently to avoid burning.
  4. Add Noodles and Sauce: Add the broken lasagna noodles, jarred pasta sauce, water, Italian seasoning, and crushed red pepper flakes (if using) to the skillet. Stir everything to combine evenly.
  5. Simmer: Cover the skillet with a lid and bring the sauce to a low boil. Then reduce heat to medium-low and let the lasagna simmer uncovered for 30 to 35 minutes. Stir often to prevent noodles from sticking. Add up to ½ cup additional water if the mixture becomes too thick or starts to dry out.
  6. Prepare Cheese Mixture: While noodles cook, mix together ricotta cheese, shredded Parmesan, kosher salt, and black pepper in a small bowl until well combined.
  7. Add Cheese Mixture: Once noodles are tender and sauce has thickened, drop spoonfuls of the ricotta and Parmesan cheese mixture evenly over the lasagna in the skillet.
  8. Top with Mozzarella: Sprinkle shredded mozzarella cheese over the cheese mixture layer to create a melty topping.
  9. Melt Cheese: Reduce the heat to low. Cover the skillet and cook until the mozzarella cheese is melted and bubbly, about 5 to 8 minutes.
  10. Garnish and Serve: Remove the lid and sprinkle minced fresh basil over the top. Serve the skillet lasagna hot for a delicious, comforting meal.

Notes

  • Storage: You can freeze the completely cooled skillet lasagna in a freezer-safe container for up to 2 months. Thaw overnight in the refrigerator before reheating and serving.
  • If the lasagna thickens too much while simmering, add a little more water to keep the noodles from drying out.
  • Using broken noodles speeds up the cooking process because they soften more quickly than whole noodles.
  • Covering the skillet during cheese melting helps the mozzarella melt evenly and become bubbly.
