The creamy ganache center is infused with espresso and vanilla, while the caramel adds a sweet and salty contrast. Ganache:

  • 8 oz dark chocolate, chopped
  • ½ cup heavy cream
  • 1 tbsp unsalted butter
  • 1 tsp vanilla extract
  • 1 tbsp instant espresso powder

Caramel:

  • ½ cup granulated sugar
  • 2 tbsp unsalted butter
  • ¼ cup heavy cream
  • ½ tsp sea salt

Coating:

  • ¼ cup cocoa powder
  • ½ cup melted dark chocolate
  • ¼ cup finely chopped nuts

Instructions

  1. Prepare the Ganache: Heat cream until steaming, pour over chocolate and butter, stir until smooth. Add vanilla and espresso, mix well, chill.
  2. Make the Caramel: Cook sugar until caramelized, add butter, cream, and salt, stir until smooth.
  3. Assemble Truffles: Scoop ganache, add caramel, roll into balls. Coat in cocoa, chocolate, or nuts.
