  • 45 cups low-sodium chicken broth

  • 1 teaspoon black pepper
  • ¼ teaspoon dried fennel

Instructions

  1. Cook the Sausage: Crumble and cook the Italian sausage in a large soup pot over medium heat until browned and fully cooked. Drain excess grease, leaving about a tablespoon in the pot for sautéing.
  2. Sauté Vegetables: Add butter to the pot, then add diced onion, chopped celery, and carrots. Cook for about 10 minutes until vegetables soften, stirring occasionally to develop flavors.
  3. Add Garlic and Herbs: Stir in minced garlic, dried thyme, dried basil, salt, black pepper, and dried fennel. Cook for 30 seconds until garlic is fragrant, then add chopped Roma tomatoes and cook for 3 minutes until softened.
  4. Deglaze with Wine: Pour in the dry white wine and bring to a gentle simmer. Cook until the wine reduces by half to concentrate the flavor.
  5. Add Broth and Simmer: Stir in low-sodium chicken broth, increase heat to high and bring to a boil. Cover, reduce heat to low, and simmer for 20 minutes to meld flavors.
  6. Cook Gnocchi and Add Cream: Add potato gnocchi carefully to the simmering soup. Cook for 2-3 minutes until they float to the surface. Slowly stir in heavy cream and simmer gently for another 2-3 minutes.
  7. Add Spinach: Stir in baby spinach and cook for 2-3 minutes until wilted and bright green, fully incorporating it into the soup.
  8. Serve: Serve hot, optionally garnished with grated parmesan cheese, fresh basil leaves, and hot sauce for added flavor.
