  • 1 tablespoon olive oil
  • 1 pound ground Italian sausage (mild or spicy, remove casings)
  • 2 (10-ounce) packages frozen veggies (potatoes, red bell peppers, sweet corn, broccoli, carrots)
  • 1 1/2 cups frozen kale

Seasonings

  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon minced garlic

For Serving

  • Freshly grated Parmesan cheese

Instructions

  1. Thaw the Vegetables: Heat both packages of frozen veggies in the microwave for 2 minutes to start thawing. Open the packages, chop any large broccoli or potato pieces into bite-sized chunks, and set aside while you begin cooking the sausage.
  2. Cook the Sausage: Heat olive oil in a large cast-iron pan over medium-high heat. Add the Italian sausage, sear it to brown, then crumble and cook through fully. Season with salt and pepper to taste.
  3. Combine and Finish: Drain excess grease from the pan, leaving about 1 tablespoon behind. Add the thawed veggies, and cook for 3 to 5 minutes until heated through. Stir in the frozen kale, dried basil, thyme, oregano, paprika, onion powder, garlic powder, and minced garlic. Cook for another 2 to 3 minutes until fragrant and well combined. Remove from heat, serve hot with freshly grated Parmesan cheese on top, and enjoy!

Notes

  • Any package size close to 1 pound for the Italian sausage works; a larger size will make the dish meatier. Remove casings before cooking.
  • The preferred veggie blend includes potatoes, red bell peppers, sweet corn, broccoli, and carrots. Chop broccoli into bite-sized pieces if needed.
  • Use finely grated Parmesan cheese from a block for the best texture and flavor. It adds saltiness and melts nicely over the dish.
