Ingredients

Scale

Drink Ingredients

  • ¾ cup pineapple juice
  • ⅓ cup coconut rum (such as Malibu Original)
  • ½ cup lemon-lime soda
  • ⅛ cup fresh lime juice
  • ⅛ cup simple syrup

Garnish

  • Fresh pineapple skewer
  • Ice cubes

Instructions

  1. Combine ingredients: In a cocktail shaker or a large mason jar with a lid, add the pineapple juice, coconut rum, lemon-lime soda, fresh lime juice, and simple syrup. Shake well to combine all the flavors thoroughly.
  2. Prepare glasses: Fill two 12 oz low-ball cocktail glasses three-quarters full with ice cubes to chill and dilute the drink just slightly.
  3. Pour and serve: Divide the cocktail mixture evenly by pouring half (approximately 1 cup each) over the ice in each glass.
  4. Garnish: Add a skewer of fresh pineapple pieces to each glass for an appealing presentation and an extra burst of tropical flavor.

Notes

  • You can store any leftover punch in the refrigerator for up to 24 hours, but be aware the ice will melt and water down the drink, and the soda may become flat.
  • If you prefer, substitute the coconut rum with white/clear rum or spiced rum without losing much of the tropical character.
  • Lemon-lime soda can be replaced with ginger ale or lemon-lime sparkling water for a different taste profile.
  • Simple syrup can be bought or homemade by dissolving equal parts sugar and water over medium heat without boiling, cooled, and stored refrigerated for up to two weeks.
