For the Stir-Fry:
- 1 lb flank steak, thinly sliced against the grain
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1 medium onion, thinly sliced
- 2 tbsp vegetable oil
For the Sauce:
- 1/4 cup soy sauce
- 2 tbsp oyster sauce
- 1 tbsp cornstarch
- 2 tbsp water
- 1 tbsp rice vinegar
- 1 tbsp honey or brown sugar
- 2 cloves garlic, minced
- 1 tsp grated fresh ginger
- 1 tsp sesame oil
- Optional: 1/2 tsp red pepper flakes for heat
- Prepare the Steak and Vegetables: Thinly slice the flank steak against the grain to ensure tenderness. Slice the red, green, and yellow bell peppers, as well as the medium onion, into thin strips to allow for quick and even cooking.
- Make the Sauce: In a small bowl, whisk together the soy sauce, oyster sauce, cornstarch, water, rice vinegar, honey or brown sugar, minced garlic, grated ginger, and sesame oil until smooth. Add the optional red pepper flakes if you prefer some heat.
- Cook the Steak: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the sliced flank steak in a single layer, searing until browned on both sides, about 2-3 minutes per side. Remove the steak from the skillet and set it aside.
- Stir-Fry the Vegetables: Add the remaining 1 tablespoon of vegetable oil to the skillet. Add the sliced bell peppers and onion, stir-frying for about 3-4 minutes until they are slightly tender but still crisp.
- Combine and Cook: Return the cooked steak to the skillet with the vegetables. Pour the prepared sauce over the steak and vegetables. Stir well to coat everything evenly. Continue cooking for another 2-3 minutes until the sauce thickens and coats the ingredients.
- Serve: Remove from heat and serve immediately over steamed rice or noodles for a complete meal.
