Instructions

  1. Preheat oven and prepare pan: Preheat oven to 350°F (180°C) and grease or line a muffin tin.
  2. Mix dry ingredients: In a bowl, combine flour, baking soda, ground ginger, cinnamon, nutmeg, and salt.
  3. Mix wet ingredients: In another bowl, mix melted butter, honey, eggs, orange juice, orange zest, and grated ginger.
  4. Combine and bake: Gradually add dry ingredients to wet ingredients, mix until just combined, pour into muffin tin, and bake for 20-25 minutes.
  5. Optional glaze: Mix honey and orange juice, drizzle over cooled cakes.
