Instructions

  1. Prepare the Vegetables: Heat the olive oil in a skillet over medium heat. Add the diced onion if using, and sauté until translucent, about 3-4 minutes. Then add the chopped peppers and cook until they soften, approximately 5-7 minutes, stirring occasionally.
  2. Add Garlic and Spices: Stir in the minced garlic and chili flakes and cook for 1-2 minutes until fragrant, making sure not to burn the garlic.
  3. Add Tomatoes: Pour in the grated or diced tomatoes with their juices. Simmer the mixture on medium-low heat for about 8-10 minutes, allowing the tomatoes to break down and the flavors to meld while stirring occasionally.
  4. Incorporate Eggs: Crack the eggs directly into the skillet over the tomato and pepper mixture. Stir gently with a spatula, scrambling the eggs while mixing them with the vegetables. Cook until the eggs are softly set but still moist, about 3-5 minutes.
  5. Add Cheese and Season: Sprinkle the shredded cheese over the eggs and stir until melted and combined. Season with salt and pepper to taste.
  6. Serve Immediately: Spoon the menemen onto plates or into bowls. Garnish with additional chili flakes, crumbly feta, and fresh herbs like parsley or basil. Serve warm with crusty bread or small tortillas to scoop up the dish.
