Quesadilla Filling

  • 1 1/2 cups chopped spinach leaves

  • 2 cups shredded mozzarella cheese
  • 1 tablespoon minced Greek oregano

  • 4 flour tortillas

Instructions

  1. Prepare the filling: In a large bowl, combine the chopped spinach, Greek olives, diced red onion, grape tomatoes, shredded feta and mozzarella cheeses, and minced oregano. Mix thoroughly to ensure all ingredients are evenly distributed.
  2. Assemble the quesadillas: Lay one flour tortilla flat on a clean surface. Evenly spread about a quarter of the filling mixture over half of the tortilla. Fold the tortilla over to cover the filling, creating a half-moon shape. Repeat with the remaining tortillas and filling.
  3. Heat the pan: Place a large skillet or frying pan on medium heat and add 1 tablespoon of canola oil or butter. Let it melt and heat evenly.
  4. Cook the quesadillas: Place one folded quesadilla in the skillet and cook for about 3-4 minutes on each side, or until the tortilla is golden brown and crispy, and the cheese has melted. Adjust the heat as needed to prevent burning. Repeat with the remaining quesadillas, adding more oil or butter to the pan as needed.
  5. Serve and garnish: Once cooked, transfer the quesadillas to a serving plate. Optionally, drizzle with Greek olive oil for added flavor and richness. Cut into wedges and serve warm.
