  • 2 (8 ounce) boneless, skinless chicken breasts, pounded to 1 inch thickness

  • 1 1/4 teaspoons kosher salt, divided
  • 3/4 cup drained julienne-cut sundried tomatoes in oil with herbs
  • 1/2 cup finely chopped shallot
  • 4 large garlic cloves, finely chopped
  • 1 1/2 teaspoons dried Italian seasoning
  • 1/2 teaspoon crushed red pepper
  • 2 tablespoons tomato paste
  • 1/2 cup lower-sodium chicken broth
  • 1 cup heavy whipping cream
  • 1 (20 ounce) package refrigerated cheese tortellini
  • 1/2 cup pre-grated Parmesan cheese, plus more for garnish
  • torn fresh basil leaves

Instructions

  1. Cook Bacon: In a large skillet, cook bacon until crispy, then remove and chop into pieces.
  2. Cook Chicken: Season chicken with pepper and 1 teaspoon salt, then cook in bacon fat until browned, set aside.
  3. Make Sauce: In the same skillet, sauté tomatoes, shallot, garlic, Italian seasoning, and red pepper. Stir in tomato paste, broth, and cream.
  4. Add Pasta: Cook tortellini according to package instructions, then add to the sauce with Parmesan.
  5. Combine: Add chicken and bacon back to the skillet, simmer until heated through. Serve with basil and extra Parmesan.

Notes

  • This dish can be served with a side of garlic bread or a simple green salad.
  • For a lighter version, you can use turkey bacon and substitute heavy cream with half-and-half.
