For the Panna Cotta Base:

- 1 cup whole milk
- 0.5 cup granulated sugar
- 1 vanilla bean or 2 teaspoon pure extract

- 3 tablespoon cold water
- 1 pinch salt
For the Mango Layer:
- 2 ripe mangoes
- 2 tablespoon sugar
- 1 teaspoon lemon juice
- 1 teaspoon unflavored gelatin
- 2 tablespoon cold water
- Prepare Panna Cotta Base: Heat cream, milk, sugar, and vanilla until sugar dissolves. Bloom gelatin in water, then mix into cream mixture. Pour into molds and chill.
- Make Mango Layer: Puree mangoes, sugar, and lemon juice. Bloom gelatin in water, mix into mango puree, then pour over set panna cotta. Chill until firm.
