  • 1 cup butter, softened
  • ¾ cup white sugar
  • ¼ cup light brown sugar
  • 2½ Tablespoons lemon zest
  • 1 egg
  • 2 teaspoons vanilla extract
  • ½ Tablespoon lemon juice
  • ¼ teaspoon salt
  • 1 teaspoon baking soda
  • 2¾ cup all-purpose flour
  • 1 cup chopped or crushed graham crackers

Instructions

  1. Prepare the Lemon Cheesecake Filling: In a bowl, mix cream cheese, powdered sugar, lemon zest, and lemon juice until smooth.
  2. Make the Lemon Cookies: Cream together butter, white sugar, and brown sugar. Add lemon zest, egg, vanilla extract, lemon juice, salt, and baking soda. Gradually mix in flour until dough forms.
  3. Assemble the Cookies: Roll dough into balls, flatten, add a spoonful of cheesecake filling, and top with graham crackers.
  4. Bake: Bake cookies in a preheated oven until edges are golden.
