  • ¼ cinnamon stick, or ¼ teaspoon ground cinnamon
  • ¼ teaspoon ground fenugreek, optional
  • ¼ teaspoon chili powder

Instructions

  1. Prepare the Spice Seasoning: Toast the whole black peppercorns, cumin seeds, coriander seeds, cardamom pod, and cinnamon stick lightly in a dry skillet until fragrant. Let them cool, then grind to a fine powder. Alternatively, use the ground versions directly. Mix in ground fenugreek and chili powder to complete the seasoning blend.
  2. Make Crispy Garlic Topping: Heat vegetable oil in a small pan over medium heat. Add thinly sliced garlic and fry carefully until golden and crispy. Remove from oil and drain on paper towels to prevent burning. Set aside.
