Ingredients

Scale

For the Earl Grey Cookies:

  • 3 tbsp (12 g) Earl Grey tea
  • 2 3/4 cups (344 g) all purpose flour, spooned and leveled
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup (200 g) granulated white sugar
  • 1 cup (227 g) unsalted butter, softened
  • 1 egg, at room temperature
  • 2 tsp vanilla bean paste

For the Lavender Sugar:

  • 1/2 cup (100 g) granulated white sugar
  • 1/2 tbsp culinary lavender

For the Lavender Cream Cheese Frosting:

  • 4 oz (113 g) cream cheese
  • 1/4 cup (56 g) unsalted butter, softened
  • 1 cup (130 g) powdered sugar
  • 1 tsp vanilla bean paste
  • Purple food coloring (optional)

Instructions

  1. Prepare the Earl Grey Cookies dough: In a small bowl, steep the 3 tablespoons of Earl Grey tea leaves in warm water for about 5 minutes, then strain and set the tea-infused water aside to cool. In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. In a separate mixing bowl, cream together the softened unsalted butter and granulated sugar until light and fluffy. Add the egg and vanilla bean paste, mixing thoroughly. Slowly incorporate the dry ingredients alternately with the cooled Earl Grey tea infusion until the dough comes together.
  2. Form and chill the cookies: Shape the dough into a log or desired shape and wrap it in plastic wrap. Refrigerate for at least 1 hour to firm up the dough to make slicing easier.
  3. Prepare the Lavender Sugar: Combine the granulated sugar and culinary lavender in a small bowl, mixing well to infuse the floral aroma into the sugar. Set aside.
  4. Slice and coat the cookies: Preheat your oven to 350°F (175°C). Remove the dough from the refrigerator and slice it into 1/4 to 1/2 inch thick rounds. Roll or sprinkle each cookie slice in the lavender sugar to coat them evenly.
  5. Bake the cookies: Place the coated cookie slices on a parchment-lined baking sheet, spacing them about 2 inches apart. Bake in the preheated oven for 10-12 minutes or until the edges start to turn a light golden brown. Remove from the oven and cool on a wire rack completely before frosting.
  6. Make the Lavender Cream Cheese Frosting: In a mixing bowl, beat the cream cheese and softened butter together until smooth and creamy. Gradually add the powdered sugar and vanilla bean paste, beating until fluffy. Add a few drops of purple food coloring if desired and mix to incorporate an even pastel lavender color.
  7. Frost the cooled cookies: Once the cookies have cooled completely, spread or pipe the lavender cream cheese frosting generously on top of each cookie. Allow the frosting to set for 10-15 minutes before serving.

Notes

  • Using room temperature ingredients helps achieve a smooth dough and frosting.
  • Steeping the Earl Grey tea extract intensifies the tea flavor in the cookies.
  • Adjust the amount of lavender in the sugar and frosting based on your preferred floral intensity.
  • Store the cookies in an airtight container in the refrigerator for up to 5 days to keep the frosting fresh.
  • If you don’t have vanilla bean paste, vanilla extract can be used as a substitute.
