Instructions

  1. Preheat Oven: Preheat the oven to 425°F (220°C) and line a baking pan with parchment paper to prepare for baking the potatoes.
  2. Bake Potatoes: Rub each potato all over with olive oil and sprinkle generously with sea salt. Place them on the prepared baking pan and bake in the oven for 50-60 minutes, or until the potatoes are tender when pierced with a fork.
  3. Prepare Steak: While potatoes bake, cut the steak into bite-sized pieces. Season the steak pieces with the cajun seasonings and kosher salt. Heat a skillet over medium-high heat and add half of the avocado oil. Add the steak bites and cook until browned and cooked to your preferred doneness, about 3-5 minutes. Remove steak from the skillet and set aside.
  4. Make Parmesan Cream Sauce: In the same skillet, add the remaining avocado oil and sauté the minced garlic until fragrant. Pour in the heavy cream and bring to a gentle simmer. Stir in the grated parmesan cheese, fresh parsley, lemon juice, red pepper flakes, and freshly cracked pepper. Stir continuously until the sauce thickens slightly, about 3-4 minutes. Adjust seasoning as desired.
  5. Assemble Loaded Potatoes: Once baked potatoes are cool enough to handle, cut them open lengthwise and fluff the insides with a fork. Stuff each potato with the cooked steak bites, then generously drizzle the Parmesan cream sauce over the top. Garnish with additional parsley if desired and serve immediately.
