Ingredients

Scale

Cookie Dough

  • ¾ cups unsalted butter, at room temperature
  • ⅓ cup icing sugar (powdered sugar)
  • Zest of 2 limes
  • 2 tablespoons lime juice
  • 1 tablespoon vanilla extract
  • 1¾ cups all-purpose flour
  • 2 tablespoons cornstarch
  • ¼ teaspoon salt
  • ⅔ cup icing sugar (powdered sugar) for coating

Instructions

  1. Prepare the Dough: In a mixer, cream the butter and ⅓ cup of the icing sugar until fluffy. Add the lime zest, lime juice, and vanilla extract, then beat until the mixture is light and fluffy. In a separate bowl, whisk together the all-purpose flour, cornstarch, and salt. Gradually add the flour mixture to the butter mixture and beat on low speed until just combined.
  2. Chill the Dough: Roll the dough into two logs, each about 2 inches in diameter. Wrap the logs tightly in plastic wrap and chill them in the refrigerator for at least one hour to firm up the dough for easier slicing.
  3. Preheat Oven and Slice Dough: Heat the oven to 350°F (175°C). Remove the chilled dough logs from the refrigerator and slice them into thin rounds, about 1/8 inch thick. Place the slices on baking sheets lined with parchment paper, spacing them about 1 inch apart to allow for slight spreading.
  4. Bake the Cookies: Bake the cookies in the preheated oven for approximately 15 minutes, or until the edges are lightly golden. Remove from the oven and transfer the cookies to a wire rack to cool slightly but remain warm.
  5. Coat with Powdered Sugar: Place the remaining ⅔ cup of powdered sugar into a resealable plastic bag. While the cookies are still warm, add a few at a time to the bag, seal it, and gently toss to coat each cookie evenly with the powdered sugar, creating a sweet, melt-in-your-mouth exterior.

Notes

  • Storage: Store Lime Meltaways in an airtight container at room temperature for up to 3 days. If the powdered sugar melts into the cookies, simply sprinkle with more sugar before serving.
  • Freezing: For longer storage, place the cookies in an airtight container and freeze them for up to 3 months. Thaw at room temperature before serving.
