Ingredients

Scale

Vegetables

  • 20 ounces fresh broccoli florets

Dressings & Cheese

  • 8 ounces cream cheese, room temperature
  • ¼ cup mayonnaise
  • 1 cup freshly grated cheddar cheese
  • ¼ cup grated Parmesan cheese

Other Ingredients

  • 2 cups cooked, chopped chicken
  • 1 teaspoon garlic powder
  • ½ teaspoon ground black pepper
  • ¼ teaspoon salt

Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees Fahrenheit to prepare for baking the casserole.
  2. Steam Broccoli: Place the broccoli florets in a large microwave-safe bowl with 2 tablespoons of water. Cover tightly with plastic wrap and microwave for 2 minutes. Let it sit, still covered, for an additional 2 minutes to finish steaming.
  3. Drain Broccoli: Carefully remove the plastic wrap and drain any excess liquid from the broccoli to avoid watery casserole.
  4. Prepare Cheese Mixture: In a small bowl, mix together the cream cheese, mayonnaise, cheddar cheese, garlic powder, salt, and black pepper until fully combined and smooth.
  5. Combine Ingredients: Stir the cheese mixture and chopped cooked chicken into the steamed broccoli until everything is well incorporated.
  6. Transfer to Baking Dish: Spread the broccoli and chicken mixture evenly into a 9×13-inch baking dish. Sprinkle the grated Parmesan cheese evenly over the top.
  7. Bake Casserole: Place the baking dish in the preheated oven and bake for 15 minutes, or until the top is golden and bubbly.

Notes

  • Use pre-cut broccoli florets to save prep time.
  • Rotisserie chicken, leftover cooked chicken, or frozen grilled chicken chunks work well for this dish. If using frozen chicken, be sure to thaw it before adding.
  • You can substitute mayonnaise with Greek yogurt to reduce fat but it will alter flavor slightly.
  • For extra crispiness, broil the casserole for 1-2 minutes after baking, watching closely to avoid burning.
  • This casserole can be refrigerated for up to 3 days and reheated in the oven or microwave.
