Katsu Cutlets:

Tonkatsu Sauce:

  • ¼ cup ketchup
  • 2 tbsp Worcestershire sauce
  • 1 tbsp soy sauce
  • 1 tbsp mirin or rice vinegar
  • 1 tbsp brown sugar
  • 1 tsp Dijon mustard (optional)

Bowls:

  • Cooked white or brown rice
  • Shredded cabbage or lettuce
  • Optional toppings: green onions, sesame seeds, pickled ginger, fried egg

Instructions

  1. Prepare the Cutlets: Season the pork chops or chicken breasts with salt and pepper. Dredge in flour, dip in beaten egg, and coat with panko breadcrumbs. Fry in vegetable oil until golden brown and cooked through.
  2. Make the Tonkatsu Sauce: Mix together ketchup, Worcestershire sauce, soy sauce, mirin or rice vinegar, brown sugar, and Dijon mustard. Adjust seasoning to taste.
  3. Assemble the Bowls: Serve the crispy cutlets over cooked rice, top with shredded cabbage or lettuce, and drizzle with tonkatsu sauce. Add optional toppings as desired.

Notes

  • You can use either pork or chicken for the cutlets, depending on your preference.
