This savory Italian Breakfast Strata is a delicious make-ahead dish perfect for feeding a crowd. Layers of Italian sausage, spinach, and fontina cheese are combined with eggs and bread for a flavorful breakfast casserole.

Bread Mixture:

    • 1 large loaf Italian or French bread
    • 1 tablespoon olive oil

Sausage and Spinach Mixture:

    • 12 ounces italian sausage, casings removed
    • 1 yellow onion, diced
    • 1/2 teaspoon freshly ground black pepper
    • 1/4 teaspoon dried oregano
    • 1/4 teaspoon dried thyme
    • 1/8 teaspoon dried rosemary
    • 1 pinch cayenne pepper
    • 1 pound baby spinach
    • 2 teaspoons kosher salt
    • 1 tablespoon olive oil

Egg Mixture:

  • 12 large eggs
  • 4 cups milk
  • 8 ounces fontina or fontal cheese, shredded

Instructions

  1. Prepare Bread Mixture: Cut bread into cubes and toss with olive oil. Spread on a baking sheet and bake until lightly toasted.
  2. Cook Sausage and Spinach: In a skillet, cook sausage and onions until browned. Add spices and spinach, cooking until wilted.
  3. Layer Strata: In a greased baking dish, layer bread, sausage mixture, and cheese.
  4. Prepare Egg Mixture: Whisk together eggs, milk, and salt. Pour over strata, pressing down to soak bread.
  5. Bake: Cover and refrigerate overnight. Bake in the morning until set and golden.
