  • 3/4 cup thick greek yogurt
  • 1/2 cup extra-virgin olive oil
  • 2 tbsp honey
  • 1 large egg

  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp pure vanilla extract

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (180°C) and line a muffin tin with paper liners.
  2. Mix dry ingredients: In a large bowl, combine flour, protein powder, baking powder, and baking soda.
  3. Mix wet ingredients: In a separate bowl, whisk together yogurt, olive oil, honey, egg, and vanilla extract.
  4. Combine wet and dry: Gradually mix the wet ingredients into the dry ingredients until just combined. Fold in the fresh blueberries.
